Kale and Blueberry Salad

I am back and feeling 98% better. It looks as if I am back just in time to kick off the spring season. Even though I don’t have my appetite back fully, and I am in desperate need to go shopping I wanted to share this kale and blueberry salad with you. It is the perfect salad to have when starting or completing a detox. It is filling but it won’t weigh you down. Anyway, click here to check out the recipe.

Ingredients

1 large bunch of kale

1 head of Cabbage (shredded)

½ cup of sliced almonds

1 cup of dried cranberries

1 pint of fresh blueberries

1 large purple onion diced

1 cup of sunflower seeds

3 large carrots sliced very thin

2 cloves of garlic minced

1 teaspoon of salt

Salad Dressing

¼ cup of pomegranate juice

¼ of blueberry juice

2 tablespoons of Apple Cider vinegar

1/3 cup of olive oil

Instructions

Wash kale thoroughly and tear strips. Slice the cabbage, carrots, onion, and garlic then combine in the bowl with the kale. Add the almonds, cranberries, blueberries, and sunflower seeds.

For the salad dressing add all of the mentioned juices with the olive oil and salt to your taste. Pour over the salad and allow it to marinate for 10-15 minutes before serving.
